Cupcakes for Cathy

One of my friends, Cathy, is sick, and to cheer her up I am going to make her some cupcakes.




I am going to use a rather looking simple sponge recipe that I found in The Esk Valley Cookbook on page 70:






Three-Egg Sponge Sandwich






3 x 60g eggs


1/2 cup castor sugar


15g butter


3 tablespoons hot water


1/2 teaspoon vanilla


1 cup self raising flour




Beat eggs and sugar together until thick and creamy, about 10 minutes. Disslove butter in hot water. Add vanilla to egg mixture. Sift flour three times and gently fold into egg mixture. Gently fold butter and water into mixture. Divide mixture evenly between two well greased 18cm (7") sandwhich tins. Bake in a moderately hot oven 190C (375F) approximately 20-25 minutes. This mixture may be baked in a 28 x 18cm lamington tin for about 25-30 minutes.




Some important things that you must do is sift the flour three times, so that it can air or else it won't be all light and soft like a sponge is supposed to be. Another is you have to make sure that the tins are well greased, else you will have trouble getting you sponge out later once it has cooled.




Now, you may be thinking 'What? That isn't a cupcake recipe!' Well instead of making a sponge cake, I am going to pour the mixture into some patty pan in a cupcake tin, don't fill them up all the way only and two-thirds so that they have a flat top (you don't want them to overflow!). Then I am going to ice them with Strawberry icing, (for recipe scroll down), you could also turn them into butterfly cupcakes or make a simple butter cream icing.

Strawberry Icing



3tbsp. butter


1/4c. crushed strawberries


1 tsp of Vanilla


1/4 tsp salt


2 1/2 c. powder sugar


Blend together salt and butter. Add sifted sugar alternately with crushed berries. Add vanilla and blend into the mixture. Spread on the cake. This frosting is especically good for Angel Food and Sponge cakes.


This recipe tastes great, and looks pretty too. If you dont have any fresh strawberries you can use frozen ones, but make sure you defrost them first.
